The Struggle is Real!

Updated: Aug 29, 2019

I have been attending WW workshops for a while now and am struggling. One of the ways in which I am hoping to improve my eating habits is when we are camping. I have started collecting and creating healthier meals that are "travel friendly". I've decided to refer to it as Road Tripping with WW! This is one of my favorites so far! I will continue to share recipes and ideas as I find ones that work for us.

🚗Road Tripping with WW🚗 This is the recipe for a really great Asian Pasta Salad! I usually serve it with Asian grilled chicken, but makes a great lunch on its own or as a side dish to any grilled chicken. I usually prepare the salad ingredients and dressing separately and add the dressing on the day I am going to serve it. Perfect picnic take along! Ingredients 8-oz. pkg. thin spaghetti, uncooked and broken into fourths 3/4 cup carrot, peeled and cut into 2-inch strips 3/4 cup yellow bell pepper, cut into strips 3/4 cup red bell pepper, cut into strips 1/3 cup green onions, sliced

Ginger Dressing: 1/4 cup canola oil 3 tablespoon rice vinegar 3 tablespoons reduced-sodium soy sauce 2 teaspoons sugar 1/8 tablespoon fresh ginger, grated 1/8 teaspoon cayenne pepper How to Make It Cook pasta according to package directions; drain and rinse with cold water. In a large bowl, combine all ingredients except Ginger Dressing and garnish. In a separate bowl, whisk together all ingredients for Ginger Dressing. Pour over salad; toss. Refrigerate one hour 1 1/2 Cups per serving 8 Freestyle points
